Pumpkin Muffins

It was my turn for treats and devotional at my Woman’s Bible study last Friday! (I meet every Friday morning at my church with a wonderful group of ladies!! Check out Family of Christ!)

Since we are close to Thanksgiving and pumpkin is very much in season, I decided to try a muffin recipe from my new Primal Blueprint cookbook. (I’ll do a post later about our family being Primal!) I am going to make them again today….after which I will take a pic and post it here….but for now here is the recipe! They are awesome and the are Gluten/Grain free!This is my version!

Pumpkin Muffins
Ingredients:
1/2c of sifted coconut flour (I get mine at Whole Foods, online or Lakewinds)
2 tsp pumpkin pie spice
1/2tsp baking soda
1/2 tsp salt
1/2c pureed pumpkin, or you can use 2/3c mashed banana
6 eggs
4 tbsp Butter, melted
1/3c maple syrup(pure) or honey
1 tsp  vanilla
12 pecan halves

Servings: 12        Preheat Oven to: 400

Use metal muffin cups for these muffins. They stick too much to paper muffins cups. You can also just grease your muffin pan and use no muffin cups.

Sift your coconut flour, baking soda, salt and spices into a small bowl. Stir well and set aside.

Place pumpkin puree in a medium bowl, one by one, add eggs mixing well with pumpkin after each egg is added. Add melted butter, honey, and vanilla. Mix thoroughly.

Add dry mixture to egg mixture and blend well with a whisk until most of the lumps are gone. Do not over mix.

Spoon batter into your grease muffin pan or cups liners two thirds full, place pecan half onto of each batter cup. Bake for 18-20 minutes until golden brown and a tooth pick inserted into the center of a muffin comes out clean. Put muffins on a wire rack to cool.

  1. These sound nice. I have yet to try making Primal muffins, even though I’m forever craving something baked! I think I’ll try these with almond flour. I can’t seem to get used to the taste/texture of coconut flour! Thanks for the recipes!

    • The texture and measurements might change if you use almond flour, I haven’t tried it. These muffins have enough pumpkin that I cannot tell there is coconut flour in it. I served them once at a monring Bible study and the ladies had no idea I was giving them something grain and gluten free!! :)

  2. Awesome! I have made this recipe from the cookbook as well and my whole family loved them! I really like your idea about using banana instead of the pumpkin! And I will have to try your version next time! I found your site through joyful abodes' facebook page. I am always looking for people who are living primally too!
