My husband entered a Chili cook off at work. Tomorrow is his day for competition so we are making his chili tonight. I thought it would be great to share with all of you! This is a Primal recipe, although we have added beans (which are not primal for some people) so just omit them if you don’t want them. We used venison for our chili that my husband, Mike, shot himself. You can also use grass fed beef or bison too!

Mike’s Whiskey Buck Chili
Ingredients:
1lb Venison (can use beef or bison)
28oz crushed tomatoes
8oz tomato sauce (can make with tomato paste and water)
15oz can black beans rinsed and drained (omit if you want this to be truly Primal)
1/2c diced green chilies
1c Beef Broth/Stock
1oz Dark (60% or higher) bitter sweet chocolate
1tbsp garlic powder or 2 cloves minced fresh garlic
1tbsp olive oil
2-3 tbsp chili powder
crushed red pepper flakes (for heat, add what you want)
2 tbsp cumin
1 tbsp oregano
2oz whiskey (optional)
Sauté onion (and fresh garlic if using) in 1 tbsp of olive oil until tender then add venison and brown. Add crushed tomatoes, tomato sauce, beans, beef broth, diced chilies and all spices stir. Add chocolate and whiskey (if using) stir and bring whole mixture to a boil. Turn heat to Low and simmer for 1 hour.Alternate: Sauté onion and garlic in olive oil adding venison until browned. Place in a crock pot with all other ingredients and spices, stir. Cook on Low for 6-8 hours or High for 3-4 hours.
Suggested Add-Ons: diced avocado’s, diced tomatoes, diced onions, shredded cheese, full fat sour cream, etc….
