Thanksgiving Primal Stuffing

My Mother-in-Law and I have been busy at work cooking today in preparation for tomorrow’s big food day! She has the traditional mashed potatoes and stuffing and I made ahead the Primal Cranberry Sauce (which I posted pics of!) and I also made a bread-less Primal Stuffing today too!!! It looks soooooo yummy I can’t wait to try some with my turkey tomorrow! I thought I would share this recipe too, just in case you need a last minute side dish! It would also be a great meal on its own too!! I hope you try it sometime soon!

Primal Bread-less Stuffing/Dressing:

1lb medium Italian pork sausage
5 stalks celery, diced
4-5 carrots, diced
4 c mushrooms, diced
1 medium onion, diced
1/4c chicken broth (the veggies give off lots of juices too)
1/2 tbsp garlic powder
1 tbsp fresh sage, diced
1-2tsp fresh thyme, pull tiny leaves from stem and put in pot
1/2 c dried cranberries, finely chopped
1/2 c sliced or slivered almonds
4 tbsp Olive Oil
salt and pepper to taste

Preheat oven to 350.
In a large pot, heat olive oil and saute onions until tender, add sausage and brown. Add the celery, carrots, mushrooms, chicken broth, cherries, sage, thyme, garlic powder, almonds, salt & pepper. Mix well and lower to simmer cooking 10-15 minutes until veggies soak up most of the chicken broth. Transfer to a large glass baking dish and cover.
Bake at 350 for 45 minutes. (Can be re-heated in a 350 oven next day!)
