Winter Soup

Well I am back after a weekend of digging us out of almost 20 inches of snow!! Winter is here for sure and after reading a couple of Primal/Paleo blogs I got the idea to throw together a Winter Soup. The great thing about soups is you can make one and change the ingredients over and over and have endless combination’s to make wonderful soups all winter long. In fact if you get really creative and motivated you could make up two or three pots of soups on a weekend and then freeze it for later!!
Here is what I made for dinner tonight….its smells great cooking right now!

Winter Soup

Ingredients:
1 -1 1/2 lbs of beef stew meet
1 Winter Squash, Butternut Squash or Acorn Squash, peeled and cubed
5-6 medium carrots, peeked and diced
1 medium onion, diced (I like to use frozen diced onions)
28oz can diced petite tomatoes
4c beef broth
salt & pepper to taste
1/2 tbsp garlic powder
1/2 tbsp Northwoods Seasoning (Penzeys) (or paprika, thyme, & rosemary about 1 tsp each)
3 bay leaves
1 tbsp Olive Oil


In a large soup pot, add olive oil heat to med high, add onion and saute, then add stew meet and all spices (except bay leaves). Saute all. Once meat is browned add beef broth, tomatoes, carrots, squash and bay leaves. Bring to a bowl and then simmer for 1 hour. Serve and enjoy. Add green onions as a garnish, or a dollop full fast sour cream!!
