Meatball Stir-Fry

Since I have been cooking up a storm this past weekend, I was looking to make something easy easy tonight for dinner! So I threw together this yummy meatball stir fry!

My husband gave the seal of approval and so did both my 3-year-old and 10 month old boys!!

Here’s what you do:

Easy Meatball Stir Fry

Ingredients:

1lb ground beef

1 package frozen stir fry veggies (or your favorite fresh veggies like; zucchini, onions, asparagus and mushrooms)

2 tbsp butter or olive oil

Garlic Powder, Salt & Pepper, Oregano, and Rosemary

Heat frozen stir fry veggies in microwave, or steam fresh veggies until half-cooked. Use all spices and mix them into the ground beef (you can add one egg to the spices and beef mix and or some grated onion, both will add more moisture and flavor). Heat a large skillet to med-high, add butter and then add small (about 1 oz) meatballs to pan, roll the 1 oz portions with you hands to shape meatballs. Cook meatballs for about 5 minutes, turning to brown. Add veggies and stir to mix. You can add a little more salt & pepper to mix at this point. Lower heat a bit and cover for about another 5 minutes. Veggies will steam in pan and the water given off will prevent the meatballs from burning.

I served this as is, but you could also serve over some roasted spaghetti squash too!
