Here is a new recipe for you all! I made Chicken breasts with fresh salsa (my local grocery stores caries some great brands and also makes it fresh sometimes too, eventually I will get to making my own!) and cheese. Our side dish was sautéed cabbage! It was a great and fast! I always keep a bag of frozen chicken in the freezer. This spring I plan on buying a few cage free chickens from a lady at our farmers market. I want to stock up on them over the summer!
Here is the recipe:
Broiled Chicken w/Salsa & Cheese and Sautéed Cabbage
2-4 Chicken Breasts (if they are large I butterfly them for quicker broiling)
1/2-1c fresh or your favorite salsa
1/2c Colby jack or Monterrey jack cheese, shredded (if you are not a dairy eater, omit)
1/2 head of cabbage, sliced in to shreds
2tbsp Olive Oil
1 tbsp butter
Salt & Pepper
1/2 tbsp Garlic Powder
1/2 tbsp Oregano
1/2tbsp Chili Powder
Turn Broiler on, if you have a choice set it to high. Make sure oven rack is 5-6 inches from the heat/flame. Season chicken breasts with salt & pepper and chili powder, place under broiler and broil for about 6-7 min each side until cooked through, make sure not to over cook them! Take chicken out and top with cheese, place back under broiler until cheese melts. While the chicken is broiling the first time, heat the olive oil and butter in a medium heat pan, add garlic and oregano to butter oil mixture, stir and then add cabbage. Toss the cabbage around in the sauce and continue to cook until is just starts to wilt. Cook the cabbage so that it is warm but still crisp!
Plate your chicken with cheese and top with salsa and a side of cabbage! ENJOY!!
