So here I sit on the night before my second weigh in for my 30 Day Primal Challenge…feeling good. I have had a great week! No real cheats! But today I was really wanting my old spaghetti bake I used to make. It was a love in this house. Rotini Pasta, can of pasta sauce, can of water, cheese, oven and Carb Overload!! So I really wanted to make something close to that..you know good good comfort food. Well I have used Spaghetti Squash a handful of times in place of regular pasta noodles, and I thought I would give it a try!! Here is what I came up with….and yes it was an even bigger hit than the old version!!! It’s so good you could fool any regular pasta eater!!
Fooled You Spaghetti Bake
1 Spaghetti Squash
1 lb Italian sausage (links or ground)
1 tbsp Olive Oil
1/2 container mushrooms, diced
8 oz can tomato sauce
1/4 cup of Heavy Cream (can sub 1 tbsp tomato pasta to thicken if you don’t do dairy)
1 tsp Basil
1 tsp Oregano
3 tsp Garlic Powder or 2 cloves minced
1 tsp crushed red pepper flakes
1/2 cup Mozzarella Cheese, shredded (leave out if you don’t do dairy)
First, roast the squash in a 400 oven for about 40-45 min, cut squash in half and scoop out the seeds first, place cut side down on pan and roast. When its done, use a fork to scrap out the flesh into a colander to drain. The flesh will look like noodles. Using a large spoon, squeeze out as much liquid from squash as you can. Set aside. Heat olive oil in a pan on med-high heat, add sausage and begin to brown. I always add the spices first, the add mushrooms. Saute for a few minutes until sausage is mostly cooked. Add tomato sauce and cream stir can cook for a few more minutes. The sauce will start to thicken. Add the squash noodles to the sauce and stir to combine. Place everything in a 9×13 pan, sprinkle the cheese all over top. Bake in a 350 oven for 30 minutes!! Enjoy! Serves 6-8.

It was awesome and would be great without the cheese, just replace the cream with about 1tbsp of tomato paste to thicken it up a bit!! Its soooo good!
