We have really been on a squash kick around here! I have a couple of bags of frozen chicken breast and I have been trying to come up with some new ways to cook with them.
Chicken can get pretty boring really. This recipe using a little cinnamon in it and adds a really interesting twist to it.
Here it is:
Baked Chicken with Butternut Squash
2-4 Chicken Breasts (if they are large, butterfly them for quicker cooking)
1 Butternut Squash, peeled and diced into cubes
Salt & Pepper, to taste
1 tsp Cinnamon
1 tsp Truvia
2-4 Tbsp Butter, cut into small pieces

Preheat oven to 425. Butterfly your chicken if you need to and sprinkle with salt & pepper. Place in the bottom of a 9×9 backing dish (larger if you have more chicken). Place squash cubes all over the top of the chicken. Sprinkle the cinnamon and truvia over the squash and then add the small pats of butter around the squash. Cover dish with tinfoil and bake in the oven for 40-50 minutes until squash is tender and chicken is cooked through. Serve and Enjoy!
