Potato Pizza (Gluten Free)

Ok…I know…Potatoes are not really on the Primal/Paleo list at all, and they are not really very low carb, BUT when I have a craving for Pizza I would rather choose a Potato over Wheat Pizza Dough! So I tried a little experiment, we had no idea if it was really going to work. To our surprise it was pretty tasty!! Next time I am going to try to use a combination of Almond and Coconut Flour to make a dough,we’ll see which Pizza comes out on top! For now I would recommend this Pizza to you. You can add whatever toppings you would like and if you have had a very low carb day and plan to be pretty active after dinner, this dish would be great!

Potato Pizza

2-3 Medium Red or Russet or Golden Potatoes, or 1 bag Simple Potatoes, Shredded

2 tbsp Olive Oil

1 tbsp Butter

Garlic Powder

1/4c Pizza Sauce or seasoned Tomato Sauce

1/2c Mozzarella Cheese, shredded

Pizza toppings, like Pepperoni, Sausage, Mushrooms, Green Olives, etc

Heat oil and butter in a large non-stick pan. Add shredded potatoes to pan and smash down to form large pancake form, will become the crust. Fry on one side until bottom starts to become golden brown. When its time to flip, after about 5-6 minutes, use a large plate to put over pan (ask for some help here) and flip the potato crust from the pan to the plate, then slide the potato crust back into the pan to brown the other side. Once the second side is browned slide the whole potato crust onto a greased baking sheet (grease pan with butter and sprinkle with garlic powder). Bake the crust at 375 for 12-15 min. Take out and top with cheese and pizza toppings. Place Potato Pizza under the broiler (5-6 inches away from heat) and broil until the toppings are bubbly and browning. Cut just like a pizza and serve. This is a knife and fork pizza! Enjoy!

  1. That looks like something my kids would enjoy. I like your recipes very much as they are easy for us busy mums and use ingredients that we would have at home. Not too fancy!

    • The times for cooking are up in the recipe. Its about 12-15 minutes to cook the potato crust and then about 2-5 minutes under the broiler to melt the cheese and heat up the toppings! Hope you enjoy it ! Its a little different but we thought it was great!
