Roasted Turkey Breast & Sautéed Zucchini

It seemed to me that the whole month of January all of the grocery stores were trying to get rid of their leftover Turkeys, Ducks, Goose and what not! So upon searching my freezer the other night I remember that I  have purchased a very cheap frozen Turkey breast!! I got two great dinners and several lunches out of that turkey breast!! All for about $3.71!!

Here is what you do:

Roasted Turkey Breast & Sautéed Zucchini

1 Turkey Breast

2 Tbsp Butter

Salt & Pepper (any other spices you would like too, you can make it an Italian Bird, Spicy etc)

2 medium Zucchini

1-2 Tbsp Olive Oil

Its super easy. Preheat your oven to 375. Place the Turkey Breast in a small roaster pan. Cut up the butter into small pieces and place in the bottom of the roaster, do this to make some juices for basting. The Turkey Breast doesn’t release a lot of its own juices like a whole turkey would. Salt and Pepper the Turkey, I like to drizzle some Olive Oil on too. Place Turkey in the oven for 2-2 1/2 hours (check package for exact time based on the weight of your turkey breast too). Make sure to bast your turkey breast every so often with the pan juices. When done roasting, let your Turkey breast rest for at least 10 minutes. Cut the breast meat off in two whole pieces and then cut across the grain to make serving size pieces. Your Turkey will be very moist if you do this! While the Turkey is resting cut your zucchini into bit size discs. Heat olive oil in a pan at med high heat. Place zucchini discs in and lightly fry them up. Add some salt and pepper to taste!
