I love Chicken Salad…in the old days of dieting with Weight Watchers I used to make a version of this but it was with lots of “fake” products like Fat Free Mayo! YUCK!! Now I make a close to Primal version that I just love. Its super easy to make and keep on hand for lunches or make it up for you next potluck!! Even your none “real food/primal/paleo” friends can put it on a bun and have a sandwich…but I would stay away from the high fructose carb bombs if I were you!!

I like to use a deli rotisserie chicken from my grocery store deli counter. But you can also roast your own chicken for this recipe. Once my Farmer’s Markets open this spring I can buy my cage free chickens from my chicken lady and roast those instead!!!
The reason I call the “Ever Changing Chicken Salad” is because each time I make it its a little different based on what fruits and veggies were on sale, or in season! There really are endless variations of this and once you make it once you can easily experiment with other ingredients!
Here’s what you do:
Ever Changing Chicken Salad
1 Rotisserie or Roasted Chicken, (picked clean, shred or dice up all the chicken meat)
1/4 – 1/2c Real Mayo (try an organic or all natural brand, I will try my hand at making homemade mayo soon and post for you all)
1/2c Mustard (use a deli, dijon or spicy brown type)
Salt & Pepper to taste
1/2 tbsp Garlic Powder
1/2 tbsp of Dill Weed
3 Celery Stalks, diced
2 large Carrots, peeled and diced
1c grapes, halved, or 2 medium apples, diced or 1c Strawberries, diced or 1c Green Peppers, diced
Take shredded chicken, all fruit & veggies and mix up in a bowl. Add mayo and mustard and mix well. Add spices and mix again! Easy easy Chicken Salad. It tastes great once chilled and the next day is the best. That’s when all the flavors have developed over night!
Tip: If using apples as your fruit choice, dice them and then squeeze the juice of one lime over them. This will prevent them from turing brown!

Yum! I get nervous about raw egg may on but really want to make my own!
Yeah I know…I haven’t tried it yet! But I am thinking of using Olive Oil when I try. We’ll see how it turns out!
