Chris’s Meatloaf Muffins

Ok…so this is not my idea but I just loved it so much I decided to make my meatloaf in this fashion. I hope you love it too. In order to get the meatloaf cooked faster and have nice easy portion sizes, my friend, Chris, decided to cook the meatloaf in a muffin pan instead of a loaf pan!! Genius! So here is my recipe and Chris’s idea to make them in muffin tins!! Thanks Chris!! :)

Meatloaf Muffins

Ingredients:

1lb Ground Beef

1lb Ground Pork Sausage

2 medium carrots, peeled and shredded

1 medium onion, either diced small or shredded into sort of an onion paste

1/2 tbsp Garlic Powder

1/2 tbsp Chili Powder

Salt & Pepper to taste

Place both meats in a mixing bowl add carrots,

onion and spices. You can mix this in a stand mixer if your prefer, using the dough attachment. I just got in there with my hands!! It’s the primal way really!! Mix everything together just until it’s all incorporated, don’t over mix or your meatloaf will get tough.

Using a large mellon baller or ice cream scoop (I thought this was a great way to use the ice cream scoop that sits lonely in the kitchen utensil drawer!) Makes handful size, or muffin size, balls of the meat mixture and put into each space in your muffin tin baking sheet. I did spray some olive oil into each muffin tin with my Misto sprayer. Although you don’t need too, since there is enough fat in the pork to although the meatloaf muffins to come out of the pan easily!

Bake your meatloaf’s at 375 for 35-40 minutes. Take out and serve!

My husband loved taking these to work and the kids gobbled them up. They were very easy to cut up for my 1 year old and 4 year old!
