Cold Onion, Tomato & Cucumber Salad

I wasn’t sure about trying this recipe out on the family with all the raw onions in it, but I learned a little trick watching the food network that has made my raw onion simply wonderful. The trick is to place the cut onion immediately into a bowl of ice water, it takes the bite right out of it, but leave all the flavor!!! I hope you enjoy this salad with all that yummy grilled meat this summer!

Cold Onion, Tomato & Cucumber Salad

Ingredients:

1/2 of a red onion cut into slices (remember to dump the slice into an ice bath before mixing in the salad)

2 Vine Ripe Tomatoes

1 cucumber, diced

Generous drizzle of Olive Oil

Fresh Basil leaves, diced up

Juice of 1//2 Lemon, and grate the lemon zest into the salad also

Salt & Pepper to taste

Grated Fresh Garlic, 1-2 cloves

Drizzle Olive Oil into a medium bowl, add lemon juice and zest, whisk together. Add basil, garlic, salt & pepper. Whisk again. Add the cucumber, tomato and onion into the dressing and toss together until veggies are well coated! Serve as a side to any of your grilled meat dinners!! Enjoy!

  1. Classic Greek village salad, if you add some feta. My mom’s trick with the raw onion: slice onion really thin, then sprinkle some sea salt on the slices. Rub and toss with your fingers until the onions start to give off liquid (just for a minute). This really helps!
