Marinated Greek Chicken

Marinade

Here is an easy easy Chicken recipe, perfect for grilling season!! Five simple ingredients and takes very little effort!! Big flavor!! We previously purchased 10 lbs of cage free chicken meat from a local farmer and have been gobbling it up like crazy!!! That’s what we used on this recipe and I encourage you to do the same!

Marinated Greek Chicken

Ingredients:

1 whole chicken, cut into pieces, 2 breast, two leg/wing, and 2 thigh

Juice from 1 Lemon

Zest of Lemon

2 cloves garlic, smashed

2-3 sprigs of fresh Oregano, pull leave off and dice up roughly

Generous Drizzle of Olive Oil (about 1/4c)

Salt & Pepper, to taste

To make Marinade: Add Olive Oil, lemon juice, and lemon zest, Whisk together. The add the crushed garlic cloves, fresh oregano and salt & pepper. Whisk all together. 

Place chicken pieces in a large zip-loc bag, pour marinade over chicken. Seal the bag and smush all the chicken around coating the chicken with the marinade! Place bag in a small dish (in case it leaks) and place in the refrigerator. Let sit for 1-5 hours. Take chicken out of bag (discard leftover marinade and bag). Grill chicken for 6-8 minutes per side. Take off of grill and let sit for a few minutes!

I served this Chicken with the Cucumber Greek Yogurt Sauce for dipping and the Cold Onion, Tomato & Cucumber Salad as the side! ENJOY!!
