So our favorite thing to do in the summer is grill! Its sorta like making soups and casseroles in the winter time. Grilling is our warm weather comfort food!! We discovered a great little meat market in our neighboring town and they carry lots of great local meat, even a farm that sells its grass-fed beef!! Its been great. In today’s recipe we grilled some ribeye steaks (my fav!) and some chicken thighs. When it comes to chicken I can really only stomach the thighs and legs, but my pregnant self isn’t the biggest fan of chicken at the moment! Bring on the red meat!! As its goes I still like the dark fatty cuts of the chicken!! You should too!
Grilling & a Big A$% Salad
Ingredients:
- 1lb Chicken Thighs or Legs
- 1lb Ribeye Steaks (you really can grill whatever you want!)
- Salt & Pepper
Salad Fixings:
- Big Bunch of Romane Lettuce, wash, cut end off, cut in half and slice up
- 1 medium Zucchini, cut in half and then sliced
- 1/2 Red Onion, sliced (if you want to take the bite out of the raw onion, remember to dunk the sliced onion into ice water first)
- 5-8 medium mushrooms, sliced
- 1/2c whole raw Almonds, smashed (i put the almonds in a plastic resealable bag, use a rolling-pin to smash the almonds)
- 1 Red Pepper, seeded and diced
- Salt & Pepper
- Dressing: Olive Oil and Balsamic Vinegar
Grilling:
I like to just use Salt & Pepper for my Steaks and Chicken, sprinkle it on liberally!! Grill meat on medium high heat, 6-8 minutes per side for the chicken, for the steak cook to desired doneness, we are Medium folk around here, nice yummy red in the middle! The best advice I have been given on cooking a Medium steak is that it should feel like the thumb pad on your palm, it should give a little, not feel firm!

Salad:
This is easy and can be done a million different ways! Fill Salad bowl with lettuce, top with all the veggies and almonds. I like to put the dressing on each individual salad, everyone’s tastes are a little different. It’s easy to do, sprinkle individual salad with Salt & Pepper, drizzle a little olive oil over it and a couple of good dashes of the Balsamic Vinegar!!

This looks delicious! I have a couple of questions:
1/ what’s the deal with avocados and coconuts in the paleo community? They seem to be mentioned everywhere? Are they a paleo superfood?
2/ what about dressings? Olive Oil and Balsamic Vinegar is fine, but is there such a thing as a paleo mayonnaise, blue cheese, caesar, etc?

All Natural dressings are usually the way to go! Newman’s does a pretty good job with that. We usually try to stick to vinegar and oils for dressings! It is pretty easy to make homemade mayo with olive oil! I haven’t tried it myself but its on my list of too do’s! As for the blue cheese and caesar dressing, I think I see a future recipe blog post for those!! I will have to get experimenting!!
