There is just something about a good old fashion roasted chicken!! I like do this on a weekend because it gives me a reason to make some chicken soup for lunches during the week too. I will post the roast chicken recipe here but I don’t have pics for the soup, its very similar to the Turkey Soup I have posted before! So instead of simmering the turkey breast carcass, you would substitute the chicken carcass (after you take want you want to eat!
Easy Roast Chicken
Time: Prep – 20 minutes, Cook – 1 1/2 hours
Serves: 4-6
- Whole Cage Free Chicken (they are usually called whole fryers)
- 6 pads of butter, about 2 Tbsp cut into squares
- 1 Tbsp Dried Thyme
- Salt & Pepper
- Whole Lemon, cut in half
- Olive Oil
Pre-heat your oven to 375. Rinse your chicken well before preparing it. I always brush some olive oil into the bottom of my roaster pan to prevent the chicken skin from stinking to the sides and bottom! Place Chicken in the roaster pan (I have a small roaster pan perfect for chickens). At this point I use my finger to loosen the skin covering the chicken breast, place three pads of butter under skin on each side, I slide one way to the back, one down by the leg and one on top of the front part of breast. Do the same on the other side. Squeeze lemon all over bird and then stick the lemon halves into the cavity of the bird. Sprinkle thyme and pepper over the chicken, and then liberally sprinkle salt all over the chicken. I love really salty crispy chicken skin!!! So do as much or as little as you would like! Place the chicken in uncovered roaster pan into oven for 1 1/2 hours.
Carve the chicken and serve with your favorite side! I will put the carcass of the bird into a soup pot and make soap just like my Turkey Soup recipe!! Enjoy!

Yippee! Thanks so much for this! I have bookmarked this for future use. We picked up three beautiful organic roasters from a local farm the other day, but they sadly sit in the freezer as it’s a bit too warm here to comfortably turn on the oven.
Cool!! I had someone mention to me that they do their whole chickens in their crock pot!! Not sure how to do that, but it might be worth a try in this hot weather!! Roast chicken tastes so much better to me than when I grill it!
