Last week I got a mighty fine looking Eggplant from our local farm, and I wasn’t sure what to do with it!! We also had some yummy Country Style Ribs from the meat market. We decided to just grill everything! It was a great night out for it! You can use my Dry Herb Rub for the ribs! You could also do this recipe indoors under the broiler. I had a gas oven and my boiler has real flames, always nice for indoor grilling on a raining day or in the winter!
Grilled Country Style Ribs & Eggplant
Serves: 4
Prep Time: 15 minutes
Cook/Grill Time: 16-20 min for ribs; 5-10 min for eggplant
Ingredients:
- 4 Pork Country Style Ribs (these are much like pork chops, minus the white meat, its all dark here!)
- Dry Herb Rub
- 1 Medium to Large Eggplant, cut into rounds/discs
- Salt
- Olive Oil
Start by preheating your grill. Then cut your eggplant into rounds and lay them out on a paper towel. Salt the eggplant generously on both sides and let sit, flipping and salting every few minutes. This will draw out some of the moisture and help the eggplant hold up on the grill. Meanwhile, rub the dry herb rub into the ribs and let them sit. When grill is ready, place ribs over heat (medium high if gas grill, if charcoal spread coals out evenly). Grill 8-10 minutes per side (longer maybe needed depending on the heating of your grill). Half way through grilling the ribs, move them away from the center of the grill and place the eggplant rounds over the heat in the middle, grill 3-5 minutes per side. You want them to be soft but firm.
Remove from grill and let sit for a few minutes. I like to serve these together, taking a bite of eggplant with a bite of pork!! Delicious!! Can also serve with a homemade BBQ sauce! (I’ll have to make up that recipe soon!!)
