Zucchini Noodles

This is a super easy side dish to make. It’s a nice change to have something other than the common steamed broccoli I almost always make!! LOL My kids think this is fun, too!! It’s a great way to make vegetables fun…makes them much easier to get eaten instead of left on the plate!! My 4 year old even joked that these looked like worms!! “Look Mama, I am eating worms for dinner!!” He thought it was cool! :)

You could even use this “noodles” with a spaghetti sauce, although I prefer to use a roasted Spaghetti Squash for that. These would fit the bill too!

Here’s what you do:

Zucchini Noodles

Serves: 4

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 small, 2 medium or 1 large Zucchini
  • Salt & Pepper
  • Butter or Olive Oil

This is easy easy easy!! Cut your Zucchini into long thin strips, that look like think noodles. I usually make mine about 4 inches or so long. Heat up butter or olive in a medium sized pan. Salt & Pepper your Zucchini and place in the heated pan. Sauté the zucchini until they begin to soften. Remove from heat and serve!!

That’s it! Super Easy!! I served mine with bun-less Hamburgers and some watermelon!! It was a great and easy summer meal!!
