Pork & Pineapple Kabobs

Pineapple is not something I usually buy often, but they have been very cheap and very tasty at Costco and I couldn’t help myself I just had a get a few. Defiantly NOT a local food here, but I just love pineapple! Instead of just nibbling on the pineapple I decided I better use it for meal!! To me there is only one thing that pineapple goes best with and that is Pork!! I used some nice big pork chops for the recipe and grilled up some very tasty Kabobs!! It was a great summer treat!

Here is what you do:

Pork & Pineapple Kabobs

Serves: 4

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 Thick Cut Pork Chops, cut into cubes (can use a whole pork loin too)
  • 1/2 a Pineapple, (I pre-cut mine into chunks before hand)
  • Salt & Pepper
  • 4 Long Wooden Skewers, soaked in water for 30 minutes

Before you begin, make sure to soak your skewers in water for 30 minutes, this will prevent them from burning on the grill.

Assemble you kabobs by alternating pineapple chunks with pork cubes until you fill your skewer, leaving room to hold the kabob in either end. Once the kabobs are assembled, sprinkle with salt & pepper. Place kabobs on a pre-heated grill. Grill, turning kabobs frequently for about 15 minutes, or to desired doneness.  Remove from grill and serve.
